
This online healthy Recipe as I often do. Because I love the soup with carrots., it can make you much healthy, I just adapted the recipe in my own way for a little sweetness and spice. You make your adjustments.
Servings: 4
4 carrots cut into pieces (I am large) / 1 onion chopped (not too heavy) / 3 cups broth of your choice / salt and pepper to your taste / 1 / 2 c. Tsp curry powder (I use cumin) / 1 / 4 c. Tsp garlic powder (I use salt, onion) / 1 cup of milk (2% fat or less) / 2 c. Tablespoons all-purpose white flour / 1 c. Tablespoon fresh parsley
Note: I would add cajun spices, and if the carrots are not sweet, I add 1 small packet of splenda for coffee.
1. Place first 6 ingredients in a saucepan.
2. Cover and cook about 30 minutes.
3. Reduce pureed in blender electric.
4. Mix milk and flour to avoiding lumps and add to mixture of carrots.
5. Simmer about 5 minutes.
6. Serve and garnish with parsley.
